Our protocol involves the elimination of the following.... (there's a science behind it but to much to explain here and now)...
Basically these are gone:
ALL grain (gluten free usually uses rice and that is something we live without)
LOW sugar content (carb/sugar under 10 g. per serving)
NO cow milk
No high glycemic
We incorporate:
living foods (enzymes)
glutathione rich foods
vitamin D
sockeye salmon
goat milk/cheese is okay
veggies
low glycemic fruits

I think our story is fascinating - and other children with Type 1 can learn a ton from it! We have used the synergy of real food, eliminated the causes of the disease....and in Aug. 2008 got our "Diagnostic cure". We are against genetically modified grain, cow milk and high glycemic foods.
